I think this is a leaf sandwich recipe. You roast a bunch of mushrooms and scallions in a hot oven as your main ingredients. And you have a simple poblano yoghurt while they are baked. Save everything high above the hearty slices of bread that is well toasted and you are ready.
Yogurt poblano is a key ingredient here, but I fully understand if you want to skip it due to time, lack of poblanos, or you are anti-chile. No problem, just about every taste-forward yogurt yogurt will make in place. You could just crush a clove of garlic in a paste with a pinch of salt and mix it into your favorite plain yoghurt – also delicious. Or, tap a teaspoon of mustard in your yoghurt.
