Ruby Slice Cake Slices + Swedish Fika Contest – Green Kitchen Stories

How we've been blogging for almost ten years and still haven't told you about one of our most Swedish traditions. Fika is an important part of our culture. It's a great break to chat with your friends, family or coworkers over coffee or tea and a sweet specialty at home. It reflects the Swedish ideal of deceleration to appreciate the small pleasures of life and is also a good demonstration of the Swedish contraction. You see, we Swedes are not as social and outgoing as Americans or South Europeans, so most social gatherings start with a chick as an informal way to get to know one another.

Cake Rhubarb
We have some exciting exciting competition today but before we get to that, let's tell you about the perfect cake for your next fika break. This Rhubarb toast cake is made for sharing and is a combination of two good things – a cake and a crumble. It has a soft, spongy gluten-free almond base, a layer of tasty and spicy rhubarb, and is filled with crisp and sweet sunflower. We share both a more traditional version of this cake and a hippie vegan version with dates instead of coconut sugar and aqua fava instead of eggs. So head over to the kitchen and bake it and then bring it to your Swedish fika colleagues.
