Yesterday for a change I decided to cook some quinoa for breakfast. Last fall, when I was at Disney World, the hotel had breakfast each morning with brown sugar as an option and I really liked it.
So I did. Too easy.
- I cooked the quinoa which takes about 20 minutes.
- Then we added about half a cup of dried blueberries for sweetness
- and also a couple of tablespoons of each pumpkin seed and sunflower seeds (not salted).
Also yesterday we didn't add the brown sugar and it seemed to work well since the cranberries are pretty sweet anyway.
This is just a bit of a twist on the regular breakfast of oatmeal with cranberries and seeds, but quinoa has a more full flavor and is really good for you.
What is Quinoa?
Quinoa seems to be a popular super food lately that is both good and bad. As we all try to eat better, sometimes the advertising campaign becomes excessive.
In any case, Quinoa is a type of grain that is high in protein and rare for a grain is actually a complete protein meaning it has all the necessary amino acids. Quinoa is also a low GI carbohydrate, so for breakfast it will help you stay full of more than one fruit or something more "sugary".
Only one cup contains 8g protein, 5g fiber, 15% iron DV, 30% magnesium DV, 19% folic acid and heart-healthy omega-3 fatty acids.
Also, Quinoa is an alkaline formulation, which is nice as most people have a very acidic diet and the acids in our diet tend to lead to illness and stomach problems. As cereals it is interesting that quinoa does not contain gluten, so this is a great choice for people with celiac disease and other gluten tolerances
Lastly, quinoa can be a problem for people on a limited Oxalate diet, so if you are prone to getting kidney stones, this might not be for you.
In any case, as you can see from the diagram and picture this quinoa with dried cranberries and seeds is a fantastic breakfast and really good for you too.
