One of my favorite cold soups – the green lentils (or peas), finished with a chopped brown butter and paneer cubes. Some of you may recognize it Super Natural Every Yesy.
It is a soup that I often review, and these pictures are outbursts of what ran in an early issue of the Kinfolk magazine. I made a short essay for the winter (volume two!), And ran along with some pictures of Wayne and I contribute.
Here's the deal. The magic here is the chopped brown butter. Do not miss it. Also, a good piece of rich sourdough really raises the whole experience. OR! Some good dwarf or paratha.
You can definitely explore a vegan version. You could drink some olive oil or coconut oil with spices and coffee somewhere tofu in place of paneer. A different beast, but also very good. No brown butter good on the taste front, but still good. ·)
