You all know so far how much I like a rustic, family dessert. And really, the list of desserts that fit the bill better than a simple fruity fruit is short. For those of you who have never tried to collapse, it's very simple. Start with fresh seasonal fruit, peel it with crushed dough and go to the oven. Before you know, golden toasted dolls hang in a shallow fruit bubble. In this version we combined rhubarb, strawberry and a splash of wine with fat black pepper, pine nut and oats. It sounds a little fancy, but it really could not be easier to do it.
With this particular shredding, you can prepare the ingredients up to and in front of time if you want. Combine dry ingredients, cover and leave aside. Cut the fruit, cover and bake. The rest comes together in a flash whenever you are ready to assemble the shredding and bake it.
Enjoy shredding, I know many of you are seeing the rhubarb and strawberries in your markets. Looking forward to share some highlights (and photos) from my trip to Portland when I return and unpack. -h
